Chicken enchilada recipe

Chicken enchilada recipe

1. Cook chicken in thin strips with fajita seasoning and cloves/garlic etc. Make big batch for other dishes too.

2. Wrap it up in tortillas (8 inch) with some corn and black beans and put some green enchilada sauce  in it with seam side down.

3. Put in baking dish and add some more enchilada sauce.

4. Top it off with cream sauce (butter/flour/milk in a sauce pan with chicken stock/broth and then stir in sour cream at the end) and shredded cheese.

5. Put it in oven, 400F for 20 mins.

6. Can add avocado slices on top if desired.

Gina's Pear and Apple Cobbler

Ingredients

Butter or nonstick spray, for baking dish
2 1/2 cups peeled, cored and sliced Granny Smith apples
2 1/2 cups peeled, cored and sliced Bosc pears
3/4 cup brown sugar - REDUCE TO a little less than 1/2 cup
2 tablespoons all-purpose flour
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/2 teaspoon ground allspice - Used nutmeg instead
1/4 teaspoon table salt
4 tablespoons unsalted butter, softened, divided
Topping:
1/2 cup self-rising flour
1/2 cup sugar
1/4 teaspoon salt - use much less
1 egg, beaten
2 tablespoons unsalted butter, softened
Ice cream, for serving
Whipped Cream, for serving, recipe follows
Whipped Cream:
1 cup heavy whipping cream
1/2 cup confectioners' sugar
1/2 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
Directions

Topping:
Preheat the oven to 350 degrees F. Butter or spray a 9 by 9-inch baking dish.

Toss the apples, pears, sugar, flour, vanilla, cinnamon, allspice, salt, and 2 tablespoons of the butter together in a large bowl. Add to the prepared baking dish and dot with the remaining 2 tablespoons of butter.

In another bowl, combine the self-rising flour, sugar, salt, and egg. With a spoon, drop the topping onto the apples and top with pats of butter. Bake until the crust is golden and the fruit is tender the cobbler for 40 to 45 minutes (35 minutes). Serve with vanilla ice cream and Whipped Cream.

Whipped Cream:
In a large bowl, add the heavy cream and using a hand mixer beat it for 1 minute. Add the sugar, cinnamon, and nutmeg. Whip until the cream mixture holds soft peaks.

Stuffed French toast

6 slices of bread
Hefty amount of cream cheese on each slice of bread
Jam or honey on the other side (latter was awesome)
Put them together and seal well

3 eggs
0.5 cups milk
Salt sprinkle
1/2 tsp brown sugar
Vanilla extract splash
Beat together

Soak bread and put on skillet 300-350 F
Used Pam

FRENCH TOAST BAKE -- The ideal breakfast for Christmas morning! Easy too! Prepare the night before and pop in the oven Christmas morning. SO DELISH! Your family will sing Hallelujah!

1/2 cup melted butter (1 stick)
1 cup brown sugar
1 loaf of thickly sliced bread
4 eggs
1 1/2 cup milk
1 teaspoon vanilla
Powdered sugar for sprinkling
Cinnamon for sprinkling

1. Melt butter in microwave & add brown sugar....stir till mixed.
2. Pour butter/sugar mix into bottom of 9 x 13 pan....spread around.
3. Beat eggs, milk, & vanilla
4. Lay single slices of bread in pan
5. Spoon 1/2 of egg mixture on bread layer
6. Sprinkle some cinnamon over bread/eggs
7. Add 2nd layer of sliced bread
8. Spoon on remaining egg mixture
9. Cover & chill in fridge overnight
10. Bake at 350 for 45 minutes (covered for the first 30 minutes)
11. Sprinkle with powdered sugar & cinnamon
12. Serve with warm maple syrup
