Chocolate chip muffins

preheat oven to 425F. Spray muffin pan.

All mixing should be done with a spatula


2.5 cups all purpose flour

1 tablespoon baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1.5 cups chocolate chips (bitter is better)

(Mix dry ingredients together)



1/2 cup unsalted better - melted and cooled

1/2 cup sugar

Mix

2 large eggs

Mix

1 cup milk

1 tablespoon vanilla extract

Mix

Put liquid ingredients into dry ingredients



Fold in with spatula until just combined. Do not over-mix or it will get hard.

Pour into muffin pan. (2scoops tbsp) makes 12

Bake 425F for 5 mins

Turn heat down to 375F and bake for another 13 minutes.

Take out of oven, let it cool for 2 minutes and then cool in drying rack for 10 minutes.

Store in airtight container.

Polau

Three cups basmati rice
One cup onion
1tbsp ginger paste, 1 tsp garlic paste
6 cardamom
2 bay leaves
Few cloves
Salt 1tsp

3 tbsp butter. All dry spices, onion, ginger paste.
Rice and salt and fry it up.
4.5 cups water (hot water) (also could try 1/2 or 1 cup milk instead)
Heat, about 15-20 mins?
Coloring, sprinkle powder intermittently,
Cover it up.

Chicken enchilada recipe

Chicken enchilada recipe

1. Cook chicken in thin strips with fajita seasoning and cloves/garlic etc. Make big batch for other dishes too.

2. Wrap it up in tortillas (8 inch) with some corn and black beans and put some green enchilada sauce  in it with seam side down.

3. Put in baking dish and add some more enchilada sauce.

4. Top it off with cream sauce (butter/flour/milk in a sauce pan with chicken stock/broth and then stir in sour cream at the end) and shredded cheese.

5. Put it in oven, 400F for 20 mins.

6. Can add avocado slices on top if desired.

Gina's Pear and Apple Cobbler

Ingredients

Butter or nonstick spray, for baking dish
2 1/2 cups peeled, cored and sliced Granny Smith apples
2 1/2 cups peeled, cored and sliced Bosc pears
3/4 cup brown sugar - REDUCE TO a little less than 1/2 cup
2 tablespoons all-purpose flour
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/2 teaspoon ground allspice - Used nutmeg instead
1/4 teaspoon table salt
4 tablespoons unsalted butter, softened, divided
Topping:
1/2 cup self-rising flour
1/2 cup sugar
1/4 teaspoon salt - use much less
1 egg, beaten
2 tablespoons unsalted butter, softened
Ice cream, for serving
Whipped Cream, for serving, recipe follows
Whipped Cream:
1 cup heavy whipping cream
1/2 cup confectioners' sugar
1/2 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
Directions

Topping:
Preheat the oven to 350 degrees F. Butter or spray a 9 by 9-inch baking dish.

Toss the apples, pears, sugar, flour, vanilla, cinnamon, allspice, salt, and 2 tablespoons of the butter together in a large bowl. Add to the prepared baking dish and dot with the remaining 2 tablespoons of butter.

In another bowl, combine the self-rising flour, sugar, salt, and egg. With a spoon, drop the topping onto the apples and top with pats of butter. Bake until the crust is golden and the fruit is tender the cobbler for 40 to 45 minutes (35 minutes). Serve with vanilla ice cream and Whipped Cream.

Whipped Cream:
In a large bowl, add the heavy cream and using a hand mixer beat it for 1 minute. Add the sugar, cinnamon, and nutmeg. Whip until the cream mixture holds soft peaks.
