Shrimp avocado salad

 Mainly attaching the ingredients for the volume but also the dressing which was the bomb.  I substituted with Greek yogurt but did add a little mayo to thicken up. 

Added sweet peppers, tomatoes, corn to bulk it up. 

Would add additional salt.  


Ingredients

For the shrimp

  • 1 lb jumbo shrimp peeled and deveined, tail on or off
  • ½ teaspoon paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 1 tablespoon olive oil

For the dressing

  • ½ cup mayonnaise
  • 1 tablespoon sriracha
  • 1 tablespoon lemon juice
  • 1 teaspoon minced garlic
  • ½ teaspoon black pepper
  • ½ teaspoon salt

For the salad

  • 4 cups Romaine lettuce chopped
  • 1 medium avocado chopped
  • 1 medium red bell pepper chopped
  • ½ medium red onion chopped
  • 2 tablespoons green onion chopped
  • Lemon wedges to garnish
